Started off by driving to Lake Martin and boarded a skiff for a 90 minute tour of the lake. Saw lots of Bald Cypress trees, turtles, small gators and bird life. Very informative guide and a sunny day made for a pleasant experience.


Then drove an hour south to Avery Island (not really an island - its a low hill formed when a huge pillar of salt was pushed up from the earth below - about 8 miles deep). It is where Tabasco Sauce was first made and is still made today using peppers from the fields, alt from the ground and vinegar. An interesting self guided tour fo the factory and then a drive round the grounds including a 500 strong colony of Ibis.


On the way back to Lafayette, we stopped for some King Cake and a Boudin (rice and meat sausage) at a mini market, then into Al’s Diner for some spicy Gumbo. We’ve definitely tried the local cuisine!


Back to the Acadian centre’s car park for the night.
